3 cups Pulled Pork
1 bag of Nachos
2 cups Cheddar Cheese
2 Green Onions
Preheat oven or grill to 350F
Place the chips in a large aluminum-foil pan. In a med. bowl mix pulled pork with BBQ sauce. Add a layer of pulled pork, cheddar cheese, jalapenos and green onion over chips. Add more chips and repeat process. Place in oven or grill till cheese is melted. Top with sour cream
1 tbs Roasted garlic
1-1/4 lbs Ground Lamb
½ cup crumbled feta cheese
¾ tsp dried oregano
½ tsp salt
½ tsp pepper
In a medium bowl mix the ground lamb, roasted garlic, feta, oregano, salt and pepper.
Divide into 8 portions.
Form a small ball, pat with fingertips to flatten. Refrigerate.
Preheat grill to Med-high indirect heat. Oil grate, add burgers. After 4-5 minutes flip burger. Burgers will be done once internal temp reaches 145 F
Grill buns till warm and toasted.
Add Tzatziki sauce to both sides of bun. Top with a slice of tomato, onion and burger.
Tequila Lime Shrimp
2 pounds large shrimp, unpeeled
1/2 cup olive oil
1/4 cup tequila
1/4 cup fresh lime juice
2 medium shallots, finely chopped
2 medium garlic cloves, minced
2 teaspoons cumin
salt and freshly ground black pepper
Thread 3 to 4 shrimp on the skewers. If using bamboo skewers, make sure to soak for an hour before threading shrimp. Place in a large shallow nonaluminum dish.
To prepare the marinade: mix together tequila, lime juice, garlic, shallots, salt, cumin, and pepper. Add in olive oil slowly, whisking until mixture is combined. Pour over shrimp and marinate in refrigerator for at least 1 to 4 hours.Preheat grill for medium heat. Place shrimp on grill and cook for about 3 to 4 minutes on each side. Remove from the grill, take the shrimp off skewers, and serve immediately.
